Ingredients:
- Cottage cheese - 200g
- Eggs - 4
- Psyllium husk powder - 1 tbsp
- Coconut oil or butter - 50g
Toppings:
- Fresh raspberries/ blueberries
Or strawberries - 120g
- Whipping cream - 225mls
Instructions:
- Put all the ingredients in a bowl and blend to form batter using a wide fork and then leave to expand for 5 minutes to 10 minutes.
- Let the butter or oil heat in the frying pan and then fry the pancakes on medium heat for about 4 minutes, flipping carefully. Ensure that the cheese lumps do not stick on to the pan.
- Serve with blueberries or the other berries as convenient.
