Pancakes with Berries and Whipped Cream


(Total Time: 20 min| Serves 3)

Ingredients:
  • Cottage cheese - 200g
  • Eggs -      4
  • Psyllium husk powder - 1 tbsp
  • Coconut oil or butter - 50g
 
Toppings:
  • Fresh raspberries/ blueberries
Or strawberries - 120g
  • Whipping cream - 225mls
Instructions:
  1. Put all the ingredients in a bowl and blend to form batter using a wide fork and then leave to expand for 5 minutes to 10 minutes.
  1. Let the butter or oil heat in the frying pan and then fry the pancakes on medium heat for about 4 minutes, flipping carefully. Ensure that the cheese lumps do not stick on to the pan.
  1. Serve with blueberries or the other berries as convenient.
