Eggs with Tomatoes, Olives and Feta


(Total Time: 15 min | Serves 2)

Ingredients:
  • Ripe diced tomatoes – 3
  • Olive oil – 2 tablespoons
  • Pitted and sliced Greek olives – 10
  • Eggs – 4
  • Grated feta cheese – 1 cup
  • Salt and pepper to taste
 
Instructions:
  1. Sauté tomatoes in olive oil for about 10 minutes and then fry in a large pan.
  1. Add olives into the pan and then cook for 5 minutes. In a bowl, whisk the eggs and then add to the frying pan. Cook the eggs over medium heat or until they begin to set. Add feta cheese and cook to the desired consistency.
  1. Add salt and pepper to taste and then serve and enjoy.
