Zucchini and Tomato Frittata


(Total Time: 15 min | Serves 2)

Ingredients:
  • Eggs – 8
  • Crushed red pepper – ¼ teaspoon
  • Olive oil – 1 tablespoon
  • Thinly sliced zucchini – 1
  • Cherry tomatoes – ½ cup (halved)
  • Fresh mozzarella balls – 2 ounces
  • Coarsely Chopped walnuts – 1/3 cup 
 
Instructions:
  1. Get the skillet preheated. In a medium bowl, whisk the eggs together and then add salt and crushed red pepper.
  1. Heat olive oil in a skillet over medium heat. Add zucchini slices at the bottom of the skillet and cook for about 3 minutes as you turn once. 
  1. Top zucchini with cherry tomatoes and then pour egg mixture into the skillet. Top with mozzarella balls and walnuts. Cook for about 5 minutes or until the sides begin to set. 
  1. Broil it 4 inches from the heat for about 4 minutes or until set.
  1. Cut into wedges and then serve with slices of tomatoes and basil leaves with additional olive oil.
